Gluten Intolerance- Camp Food Ideas?

I will a unit perspective for a group of third graders at a girl scout day military camp this summer. One of the girls is gluten intolerant. We cook one dinner during the week, and I would like to include her. Any design of camp dinners that fit a gluten-free diet?Gluten Intolerance- Camp Food Ideas?
I'd also parley to her parents but here are some gluten free ideas (I am not familar beside this, so are we talking military camp cooking or kitchen cooking?)
DInner ideas: Red Beans and Rice
Fried chicken nugget (using GF bread crumbs or GF cornflake crumbs. U can even use potato chip crumbs! Lays regulars are GF)
Fried Fish, same as above
GF hot dogs, no bun, GF burgers no bun (lettuce wraps instead?)
GF pizza (come frozen in crusts from Kinninnick's or set made from Amy's. Also there are GF recipe galore online!)
